2023 Sugar Flower Wedding Cake Trends

Your cake is a centerpiece of the reception! Especially if your reception is in an open and airy ballroom or outdoor tent, your cake is a display piece that tells the story of your wedding. Let your cake complement your floral installations and the designs your florist worked so hard to craft just for you.

Here we’ll chat about bold colors, maximalist designs, and dramatic (and whimsical) installations. 

By incorporating Sugar Flowers into your cake, you can have any variety and color of flowers you can dream of. You can even keep the flowers as keepsakes for years after the bouquet has dried and every crumb of cake has been devoured.

My own wedding cake in 2018 incorporated the trends of the day, as well as personal touches, like adding tuberose to the cake in honor of my grandmother’s bridal bouquet (we got married on her birthday!) Even though some of the flowers we wanted (okay, I wanted, my husband-to-be was pretty chill about any of the floral options) weren’t in season in December, I could still have them on our cake because I made them out of Sugar! Gardenias and delicate hydrangeas don’t last long once they’ve been picked, but Sugar Flowers came to the rescue with those, too.

Here’s what’s trending in 2023:

Bold Color Palattes (hello, hot pink!)

You can really think outside the box when you’re not limited to blush and bashful.

And you can’t forget this year’s Pantone color which just makes me really happy.

Baby’s Breath is Back

I’ve had a love/hate relationship with Baby’s Breath over the years. First of all, it used to be impossible to make out of sugar.

Okay, impossible is a strong word. It’s just really tedious and I had no patience.

Of course, that was before I found this handy tool to make the process faster!

But in the world of weddings in 2023, Baby’s Breath is all over. And you know what? I don’t hate it. Especially in the “monofloral” designs. It’s got some fluffy princess vibes to it.

Saturated jewel tones like burnt orange

I’ve been pushing jewel tones for like 5 years 🤣

The color, the vibrance, the drama! Just look at these gorgeous flowers here…

Monofloral/Monochromatic

I kind of combined two trends into this one but they’ve got some overlap. Monofloral trends– aka using the same flower everywhere– is for sure a bold design decision. It’s like the less is more thing, less variety, but more impact.

And monochromatic is similar, but it is a lot harder to be exactly monochromatic with fresh flowers.

Unless you’re dying the flowers, but I really do not recommend that. It’s not environmentally friendly and it’s *a little* tacky 👀

With Sugar Flowers, though, you can definitely be monochromatic!

Minimal Flower, Maximum Effect

By choosing to do one type of flower, you can create a really stunning effect. By taking away all of the “noise” of bigger arrangements, it becomes more apparent that you’re using fewer but higher quality flowers. Shoutout to the local flower farmers supporting + making this trend happen!

Yeah okay, I literally called this trend “more” because it seemed like the simplest way to explain:

More color, more movement, more flowers, bigger installations. My favorite is cake table flower installations. And when you match the flowers on your cake to the flowers surrounding your cake? *swoons*
