Gumpaste Baby’s Breath Tutorial

An easy and quick method for creating Gumpaste Baby’s Breath, this tutorial was also one of my favorites to make 🤣 It’s a workshop-style tutorial, so feel free to watch this video at 2x speed (or .5x speed if you need to really get a feel for the techniques!)

Before we get into the tutorial, hi! I’m Kelsie Delisle, the founder, CEO, and Head Sugar Artist at Sugar Flowers by Kelsie Cakes. As the only sugar flower artist here, I run a one-woman show (although I do get plenty of help behind the scenes). In today’s video, I’m diving into how to create gumpaste baby’s breath, which is a super popular trend in cake decorating and weddings in 2025. Let’s get started!

The Set Up

First up, I realized I only had blue gum paste on hand when I began this tutorial. Oops!

No worries, though! I found a bucket of white Satin Ice gum paste, which works just as well, especially if you’re not planning to ship your flowers. Satin Ice is my go-to commercial gum paste, and it works well for a small flower silicone mold like this one!

Prepping The Materials

For this tutorial, you’ll need a Katy Sue Designs Pro Flower Mold— designed by Chef Nicholas Lodge and available on Amazon— Floral wire and Floral tape. I’m using a 28 gauge wire since this is a small flower, and I cut it into short pieces and then wrapped them with a quarter-width of floral tape.

Creating the Flowers

Using the mold, I press the gumpaste into the baby’s breath cavity and dip the wire in a teeny tiny bit gum glue for better adhesion, then flex the mold to pop the flower out. Use a light dusting of cornstarch on the mold if it’s too sticky. The baby’s breath flowers are delicate, so gentle handling is key to maintaining their shape.

Drying and Assembly

I recommend allowing the flowers to dry on a piece of styrofoam to avoid squishing them.

Once dried, assembly is straightforward. Arrange the flowers at varying heights to mimic natural growth, using a thicker gauge wire for the main stem.

Wrap and pinch the floral tape around the stems to secure everything in place.

Finishing Touches

In the final touches, you can arrange the baby’s breath with other flowers, such as burgundy or white roses, to enhance the arrangement.
